Steamed Gula Melaka cake – Fiona Lau

Here’s the recipe for sharing:

Ingredients:
A.
1. Gula Melaka – 200g
2. Water – 120g
—> melt Gula Melaka with water in low fire, set aside to cool.

B.
3. Eggs – 4 nos
4. Caster Sugar – 100g
5. Salt – 1/2 tsp

C.
6. Corn Oil – 150g
7. Coconut Milk – 150g

D.
8. Flour – 400g
9. Sodium Bicarbonate – 1 tsp
10. Double Action-Baking Powder – 2 tsp —> sieved

 

Method:
1.   Whip (B) in mixer until sugar dissolved and thicken.
2.   Add in (A) and (C), mix until well blended.
3.   Fold in sieved (4), mix well.
4.   Pour batter into desire cupcake mould/paper
5.   Steam for 25 – 30 mins (time varies with size of the cupcakes).
