Cinnamon Cake – by Samantha Koh

9″ round pan in this picture.
It is good on its own or with cream cheese if you want to be fancy.

Cinnamon Cake 
195g cake flour
1 tsp cinnamon powder 
½ tsp ginger powder
1 tsp baking soda
¼ tsp salt
Cinnamon sugar (for sprinkling on top)


Wet ingredients 
2 Large eggs
130g caster sugar
113g unsalted butter (room temperature)
1 teaspoons vanilla extract
120ml low fat yogurt (room temperature)

Directions 
1) Sift flour, cinnamon, ginger and baking soda.
2) Whisk butter, sugar and salt until light and fluffy.
3) Add egg, one at a time.
4) Add vanilla extract and yogurt and mix well.
5) Fold in dry ingredients.
6) Sprinkle cinnamon sugar on top.
7) Bake at 175C for 40-45minutes.
Note: Frost with cream cheese frosting.
