Orange pound cake with walnut.

Ingredient:
5×8″ rectangle pan or 7″x7″ square pan
120g unsalted butter (I use salted)
120g fine sugar (I reduce to 90g)
120g plain flour
2 large eggs (60g each)
1 tsp baking powder
Pinch of salt
1tbsp orange juice
Zest of 1 orange

– cream butter and sugar till pale and fluffy
– add eggs 1 at a time, make sure each egg is fully beaten in before adding the next.
– beat in flour, orange juice and zest alternatively; that is beat half flour, then beat zest and juice, finally beat in rest of flour. Take care not to over beat.
– bake in 180 deg C preheated oven, 30-40 mins (depends on the shape of your pan) or until golden brown and skewer comes out clean.
– for the walnut, actually optional. I added about a handful of chopped pre-roasted nuts into the batter, and sprinkled some on top.
